Soft & Chewy Vegan Oatmeal Raisin Cookie

Ingredients
  • ¼ teaspoon sea salt
  • ¾ cup water and pinch of salt
  • 3 tablespoons raisins
  • ¼ cup gluten-free steel-cut oats
  • 2 tablespoons applesauce
  • ½ cup cashew butter, softened
  • ¼ cup coconut sugar
  • ¾ teaspoon baking soda

  • ¼ teaspoon sea salt

  • 3 tablespoons raisins
  • ¼ cup gluten-free steel-cut oats
  • 2 tablespoons applesauce
  • ½ cup cashew butter, softened
  • ¼ cup coconut sugar
  • ¾ teaspoon baking soda
Instructions
  1. Preheat oven to 350 degrees F.
  2. Add water and salt to a pot, cover and bring to a boil.
  3. Add oats, reduce heat to medium-low, cover and cook 10 minutes or until creamy.
  4. Add salt and baking soda to cooked oats.
  5. n a separate bowl, mix cashew butter and coconut sugar.
  6. Once mixed, add in applesauce.
  7. Combine both mixtures and add in raisins.
  8. Place on an un-greased baking sheet and bake for 10–12 minutes.
