Egg and Sausage Breakfast Bites

4 large squares or 6 small squares

  • Small Bunch of Parsley or other fresh herbs
  • 8 to 10 eggs
  • 1/2 cups uncooked, crumbled sausage
  • 1 small bunch kale or other dark greens

Instructions
  1. Preheat the oven to 375 degrees Fahrenheit
  2. Slice the kale then saute it in butter or oil.
  3. After sauteing, add the sausage. When the sausage is cooked, turn off the heat.
  4. Beat the eggs, then stir in the sausage, parsley, and kale.
  5. Place the mixture on a greased pan, then bake for about 20 to 25 minutes.
