Chocolate Italian Pizzelle (Desserts, Gluten-Free, Paleo)

Pizzelle are traditional Italian cookies that are made with a pizzelle iron, which is similar to a waffle iron. Typically, pizzelle are made with a combination of white flour, sugar, butter, vegetable oil, and eggs; however, for my pizzelle recipe, I use ingredients that make the cookies completely gluten-free, figure friendly and beneficial for your heart and brain.

Ingredients
  • 1½ teaspoons baking powder
  • 4 eggs
  • 1 cup Paleo flour
  • 2 teaspoons vanilla extract
  • 1 cup cassava flour
  • ¼ cup cacao nibs
  • ½ cup coconut oil
  • 2 teaspoons cocoa powder
  • ½ cup coconut sugar

  • 1½ teaspoons baking powder
  • 4 eggs
  • 1 cup Paleo flour
  • 2 teaspoons vanilla extract
  • 1 cup cassava flour
  • ¼ cup cacao nibs
  • ½ cup coconut oil
  • 2 teaspoons cocoa powder
  • ½ cup coconut sugar
Instructions
  1. Heat a pizzelle iron.
  2. In a large bowl, mix the flours and baking powder.
  3. In a separate bowl, mix sugar, cocoa powder, eggs, vanilla extract, and oil.
  4. Add egg mixture to the flour and mix well; Mixture should feel thick and slightly sticky.
  5. Mix in cacao nibs.
  6. Drop a spoonful of dough on the iron, roughly 2 tablespoons.
  7. Close iron to flatten the dough and cook for 45–60 seconds.
  8. Let cool before serving.
