Ingredients
  • 1 tablespoon cacao powder
  • 1 pound beef stew meat
  • 2 cups beef broth
  • 1 teaspoon sea salt
  • 2 parsnips, chopped
  • ½ cup canned fire-roasted tomatoes
  • 2 tablespoons avocado oil
  • ½ cup cilantro, chopped for topping
  • 2 tablespoons cassava root flour
  • 2 tablespoons garlic, minced
  • 2 tablespoons taco seasoning mix
  • ½ sweet onion, sliced
  • 1 teaspoon dried oregano
  • ⅓ cup tomato paste
  • 1 cup multi-color peppers, chopped

Ingredients
  • 1 tablespoon cacao powder
  • 1 pound beef stew meat
  • 2 cups beef broth
  • 1 teaspoon sea salt
  • 2 parsnips, chopped
  • ½ cup canned fire-roasted tomatoes

  • ½ cup cilantro, chopped for topping
  • 2 tablespoons cassava root flour
  • 2 tablespoons garlic, minced
  • 2 tablespoons taco seasoning mix
  • ½ sweet onion, sliced
  • 1 teaspoon dried oregano
  • ⅓ cup tomato paste
  • 1 cup multi-color peppers, chopped
Instructions
  1. Coat meat with salt and cassava.
  2. Toss until all bits are covered in cassava.
  3. In a large pan over medium-high heat, warm oil.
  4. Add beef to brown on each side, removing after a minute or two.
  5. Add all ingredients except cilantro to a slow cooker and cook on low for 8 hours.
  6. Top with cilantro and serve with rice or gluten-free tortillas.
